Ceylon Mace (Myristica)
Mace is the bright red lacy covering of the nutmeg and whilst having a similar flavor to nutmeg, it delivers a spicier aroma and flavor.
It is used in lighter dishes, which allows it to impart a yellow hue to the base sauce.
