Black Mustard Seed (B. nigra)
About 2MM in diameter, these tiny seeds come in varieties ranging from yellow, brown to black. While the western palate is familier with the mustard "Spreads" used in sandwiches, in Southeast Asian cuisine, the seeds are "popped" by introducing them into hot oil. This process imparts a "nutty" flavor that complements stir fried dishes, especially vegetables.
